Apple Pie Overnight Oats

Whether you're a seasoned vegan or just looking to try something new, these overnight oats are sure to become a favourite in your breakfast rotation. This is currently my go to breakfast after my gym sessions.


Ingredients

  • 1/2 cup rolled oats (I use Quaker Oats jumbo rolled oats)

  • 1 scoop (35g) Protein Works Apple & Cinnamon swirl protein powder

  • 1/2 tbsp chia seeds

  • 1/2 cup alpro greek style yoghurt

  • 1/2 cup alpro protein milk

  • 1 tsp vanilla extract

  • 1/2 tsp nutmeg

  • Chopped nuts to serve


  1. In a medium-sized mixing bowl, combine the rolled oats, milk, yoghurt, protein powder, chia seeds, vanilla extract and nutmeg. Mix well to ensure all the ingredients are evenly distributed.

  2. Transfer the mixture to a mason jar or an airtight container. Seal and refrigerate overnight, or for at least 4 hours. This allows the oats to absorb the liquid and the flavours to meld together.

  3. In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash more protein milk to reach your desired consistency. Top with your favorite toppings like chopped nuts, apple slices (for extra cronch), a sprinkle of cinnamon, or a drizzle of maple syrup for extra sweetness.

  4. Your Vegan Apple Pie Overnight Oats are ready to enjoy! This breakfast can be enjoyed cold straight from the fridge or warmed up in the microwave for a cozy start to your day.
