Vegan Basics: Chunky Monkey Protein Balls

Inspired by my old favourite ice-cream flavour, these Chunky Monkey Protein Balls are delicious and a great protein hit for those ve-gains.

Most of you know I've been on a journey to get myself fitter and stronger in the gym. There are several things to incourage fat loss and promote healing of muscles, one is to drink lots of water and the other is to up your protein intake. Protein is a macronutrient that the body uses to build and maintain the health of bones, muscles and skin. Including more protein-rich foods in your diet can help increase satiety, which may lead you to consume fewer calories overall, resulting in weight-loss


Now, I've tried alot of vegan protein bars and some of them are rather nice, however, the price of them is something that still shocks me. So, I decided to make my own protein balls using some vegan protein powder and have some fun along the way by experimenting with flavours.



I have a few different flavours of protein powder and I chose banana to make this taste like my old favourtie Ben and Jerry's ice cream flavour. By all means use whatever flavour powder takes your fancy; Salted caramel, vanilla, chocolate - the possibilities are endless!!


Ingredients

  • 3 cups/240g rolled oats

  • 1/2 cup/60g protein powder

  • 1 cup/ 250g peanut butter (or whatever nut butter you fancy)

  • 1/2 cup/125ml/8 tbsps maple syrup

  • 1/4 cup/40g dark choc chips

  • Handful/30g mixed nuts, chopped

Method

  1. In a large mixing bowl, mix your oats with protein powder until combined.

  2. Add your peanut butter and syrup and mix well.

  3. Fold through the nuts and chocolate chips.

  4. Lightly wet your hands and form 20-24 small balls of the mixture.

  5. Place into a tupperware box and refrigerate until firm.


Vegan VVitch Tips

  • These protein balls will keep fresh in a sealed tupperware in the fridge for up to 4 weeks.

  • You can store these protein balls in the freezer in a ziplock bag for up to 6 months.
