A delicious vegan breakfast inspired by the flavours of a classic chocolate bar
My favourite chocolate bar before I became vegan was the classic Cadbury's fruit and nut. My dad would always get a bar to share with me as my mum and sister were more galaxy caramel fans.
Whilst they have not yet created a vegan Cadbury's fruit and nut (one day pleeeeaaseee) I can still get my fruit and nut fix in the form of this yummy breakfast.
Ingredients
2 tbsp vegetable oil
125ml maple syrup
2 tbsp agave or vegan honey
1 tbsp vanilla extract
300g oats (I used Scottish oats)
50g mixed seeds
150g mixed nuts
100g dried fruit mix
100g dark chocolate chips
Method
Heat oven to 150C/fan 130C/gas mark 2.
Mix the oil, maple syrup, agave and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and choc chips, and mix well.
Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then stir, and bake for 10-15 mins more until golden brown.
Leave to cool completely, then toss with the dark chocolate chips and mixed fruit.
Serve with cold hazelnut milk, soy yogurt or even on top of ice cream.
The granola can be stored in an airtight container or sealed glass jar for up to 6 weeks (If it lasts that long in your house!).
