Ingredients
225g of your favorite pasta
120g fresh spinach leaves
125g asparagus
150g frozen peas
Zest of 1 lemon
Juice of 1 lemon
15ml olive oil
3 cloves garlic, minced
240ml unsweetened plant-based milk or cream
30g nutritional yeast
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Method
Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 120 ml of the pasta cooking water.
In a large pan, heat the olive oil over medium heat. Add the asparagus and cook Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the fresh spinach leaves and peas to the skillet, cooking until the spinach wilts and the peas are tender, about 3-4 minutes.
In a small bowl, whisk together the plant-based milk, lemon zest, lemon juice, and nutritional yeast until well combined. Pour the mixture into the skillet with the cooked greens, stirring to combine.
Add the cooked pasta to the skillet with the creamy lemon sauce, tossing gently to coat. If the sauce is too thick, gradually add some of the reserved pasta cooking water until you reach your desired consistency. Season with salt and pepper to taste.
