By combining soya Greek-style yogurt, protein powder, and a base of Weetabix soaked in high-protein soya milk, I created a breakfast that was not only incredibly delicious but also loaded with the protein I desperately needed after my workouts.
The best part? I could prep it the night before, so when I stumbled back into the kitchen at 6AM, it was there waiting for me. Or I could pop it in my lunchbag and enjoy when I got to work. And with toppings like peanut butter and chocolate chips, Biscoff spread, or black forest cherries, it never felt boring. Ingredients
For the Base:
6 Weetabix biscuits
320 ml soya high-protein milk
15 grams fruit syrup honey (or sweetener of choice)
400 grams soya Greek-style yogurt
35 grams protein powder (I use vanilla or if you're feeling extra indulgent for the biscoff version - Protein Works do a speculoos flavour)
Topping Ideas:
Peanut Butter Chocolate Chip
2 tbsp peanut butter, melted in the microwave
Handful of chocolate chips
Biscoff Bliss
2 tbsp Biscoff spread, melted in the microwave
Black Forest Delight
Frozen black cherries, heated with a splash of lime juice and a dash of vanilla essence
Method
In a mixing bowl, crumble the 6 Weetabix biscuits into fine crumbs.
Pour in 250ml of the soya high-protein milk and mix until the Weetabix absorbs the liquid and forms a thick paste.
Stir in the fruit syrup honey to lightly sweeten the base.
In another bowl, whisk together the soya Greek-style yogurt, remaining soya high-protein milk and protein powder until smooth. This will create a rich, creamy layer to complement the Weetabix.
Divide the Weetabix mixture evenly into three jars or containers. Press it down gently to create an even layer.
Spoon the yogurt-protein mixture over the Weetabix base, spreading it evenly.
Choose your favourite topping (or try all three for variety!) and prepare as follows:
For Peanut Butter Chocolate Chip, microwave the peanut butter for 10-15 seconds and drizzle over the yogurt layer and sprinkle with chocolate chips.
For Biscoff Bliss, microwave the Biscoff spread for 10-15 seconds and drizzle it over the yogurt.
For Black Forest Delight, heat the frozen black cherries with lime juice and vanilla essence until warm, then spoon the mixture on top.
Cover the jars or containers and refrigerate overnight (or at least 6 hours). This allows the flavours to meld together and the texture to set.
