A British Indian restaurant poppadom tray classic.
This side dish is so synonymous with my Papa VVitch that is affectionately referred to as "Dad's Onions" by my family, our partners and our children. My dad has been making this for as long as I can remember to accompany our homemade curries and one side dish that can never be left out.
So whenever a curry is on the cards we always ask "Dad's Onions?"
Ingredients
1 onion, finely diced
3 tbsp tomato sauce
1/2 tsp cayenne pepper
4 drops of tabasco sauce
pinch of salt
Coriander, finely chopped to garnish (optional)
Method
Finely dice your onion. If you wish to remove the pungent onion flavour you can place the diced onion into a bowl of cold water and place it in the fridge. (I personally don't because ain't nobody got time for that.)
Mix the tomato sauce, cayenne, tabasco and salt in a dish
Add your onions to the sauce and mix well
Cover and store in your fridge for a minimum of 1 hour
Garnish with coriander, if using, and serve with poppadoms, or on the side of your favourite curry.
This recipe is my father's take on a British Indian restaurant classic and I implore you to give it a try. It adds a fantastic kick on top of any curry and tastes phenomenal on a poppadom. As you can see it is a well loved side dish in our household and would be sacrilege to have a curry without it.
