This vegan version of the classic prawn toast uses tofu and nori to mimic the flavour and texture of prawns. It’s crispy, savoury, and perfect as a starter, side dish, or snack.

This Vegan Tofu "Prawn" Toast is a delightful twist on the starter, delivering all the flavors and textures you love without any animal products. By using tofu as the base and incorporating nori for a subtle oceanic flavour, this recipe perfectly captures the essence of traditional prawn toast.
The tofu mixture is spread over slices of bread, topped with crunchy sesame seeds, and pan-fried to golden perfection. The result? A mouthwatering snack that's crispy on the outside and tender on the inside, bursting with umami flavor.
Ingredients
6-8 slices of bread (dependant on what size your bread is)
200g extra firm tofu
2 spring onions
1 garlic clove
A small handful of fresh coriander
1 tsp ground ginger
Pinch of chilli flakes
1/2 tsp chinese five spice
1 tbsp cornflour
1 tbsp nooch
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp sugar
1 sheet of nori
Sesame seeds
Method
Blend the tofu, spring onions, garlic, coriander, chilli flakes, five spice, cornflour, nooch, soy sauce, sesame oil, sugar and nori in a food processor until a paste consistency that holds together.
Evenly spread the tofu mixture onto one side of each bread slice, pressing down firmly to ensure it adheres well.
Sprinkle sesame seeds generously over the tofu-covered side of the bread, pressing them down lightly so they stick. Cut the bread into triangles.
In a large frying pan, heat 2-3 tbsp of neutral oil over medium heat until shimmering. If you want extra flavour, add a bit of vegan butter.
Place the bread slices tofu-side down in the pan. Fry for 2-3 minutes, or until the tofu mixture is golden brown and crispy. Flip and toast the other side for another 1-2 minutes if desired.
Remove the toast from the pan and place it on a plate lined with paper towels to absorb any excess oil.
Serve hot with a side of dipping sauce.
VVitch Tips
I make a big batch of these toasts, freeze them on a baking tray and then put into a freezer bag. You can cook them from frozen too.
To make the toast even more crispy, you can lightly toast the bread slices in a toaster before spreading the tofu mixture.
You can also cook these toasts in the airfryer by brushing each side with a little oil and cooking until golden brown.
