Vegan Basics: Creamy Pepper Sauce

This quick and easy 4 ingredient Creamy Pepper Sauce recipe is the perfect addition to your vegan steak/chicken dish.

If you're vegan you've felt the frustrations of going to the supermarket picking up that peppercorn sauce packet mix to find there is milk powder in the ingredient list. (Why is it always milk powder!?!)


With the rise of delicious vegan offerings from amazing companies that give us high quality plant based steak and chicken, such as Juicy Marbles, Vivera, VFC, Meatless Farm and more; then we most certainly need plant based accompaniments and I'm here to show you the quickest and easiest Creamy Pepper Sauce that will have every one thinking you're a Master Chef.

Ingredients

  • 250ml vegan cream (I use Oatly)

  • 1-2 tbsp nutritional yeast

  • 0.5/1 vegan beef stock cube (Oxo meat-free beef stock cube is the best)

  • Lots of cracked black pepper


Method

  1. Heat the cream in a saucepan until it is on a gentle boil.

  2. Stir in half the stock cube, nutritional yeast and black pepper whilst letting the sauce simmer.

  3. Taste and add more of the stock cube if necessary (I usually stick to half as I find it too salty with a full stock cube).

  4. Serve over your favourite vegan steak, creamy mash and green veggies.


Vegan VVitch Tips

  • You fry some onions or mushrooms as a first step to add to the sauce to make it more of a jagerschnitzel sauce (as seen below)

  • As I often serve this sauce with vegan steak, I find that making this sauce first, decanting into a glass jug and then re-heating in the microwave allows me to manage my timings more effectively
