Vegan French Toast

Welcome back VVitches! Today, we’ve been experimenting in the kitchen creating a vegan twist on a beloved breakfast favourite: French toast. Whether you're a long-time vegan or simply exploring plant-based options, this recipe promises to deliver the rich, comforting flavours of traditional French toast without any animal products.

Growing up we called French toast "Eggy Bread", it was one of my favourite breakfasts to make for my family. Recently I had a craving for the thick, golden slices of bread of my childhood. So... how do we make it vegan, ensuring is just as satisfying and easy to make, using simple, wholesome ingredients?


By using chickpea flour!


So get ready for some vvitchcraft and hold on to your brooms as we transform everyday ingredients into a delightful, cruelty-free morning treat that will have everyone asking for seconds.


Ingredients

  • 2 tbsp chickpea flour (this is also called gram flour)

  • 1 tbsp nutritional yeast

  • 1 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp allspice

  • 120 ml dairy-free milk - I really recommend alpro protein milk

  • 1 tsp vanilla extract

  • A pinch of salt

  • 1 tbsp vegan butter or mild-flavoured oil

  • 4 thick slices of soft bread (I use Jason's Sourdough Ciabattin')


Method

  1. Whisk the chickpea flour, nooch, spices, milk, vanilla and salt together in a shallow container.

  2. Gently heat the butter or oil in a large frying pan, be sure to coat the pan.

  3. Dip a slice of the bread into the mixture and coat well on each side. If your bread is quite dry, leave to soak for about 20-30 seconds.

  4. Place the soaked slice in the frying pan and fry on medium heat on each side until golden brown.

  5. Repeat with the other slices.

  6. Serve with toppings of your choice! I chose cinnamon flat peach compote, yoghurt, nuts and a sprinkle of cinnamon.


VVitch Tips

  • To make the peach compote in my dish simply heat 2 diced flat peaches, 1 tsp brown sugar, dash of cinnamon, splash of vanilla extract, lime juice and 2 tbsp water in a pan until the peaches become soft.

  • You can serve this dish with any topping you desire; my children like yoghurt, raspberries and chocolate chips.

  • Ensure that you coat your pan with the butter/oil, using a silicone brush helps with this. If you do not coat your pan there is risk of your French toast sticking and we do not want that!
