This pasta dish is perfect for a romantic meal with a glass of wine. Next date night, I implore you to make my vegan garlic, chilli & lemon seafood linguine.
Veganism has come along way since the days where I could only get vegan cheese from Holland & Barrett (my god was it disgusting). Nowadays, we have access to lots of plant based alternatives, which is an actual dream.
We saw some whisperings on Instagram regarding some plant-based seafood alternatives coming to stores, this did pique our interest as I can replicate the taste of tuna with chickpeas quite easily but I am yet to master replicating the taste and texture of prawns.
Wolfman and I spotted these plant based prawns (shrimp for my American lovelies) made by Happiee company. We got extremely excited by the look of this product and started brainstorming about different things we could make, stood in the plant based aisle of Tesco.
We discuss prawn cocktail at Christmas , vegan paella with plant based chorizo and then, with wide eyes, I suggested pasta; the audible gasp from Wolfman sealed the decision - I would be making a garlic, chilli and lemon seafood linguine for date night.
I was a little skeptical about what the texture of the plant based seafood would be like, as I have an aversion to anything too mushy or soft. I was pleasantly surprised as they had a lovely firm bounce to the prawns and they were not overly fishy.
I thoroughly enjoyed this meal and it was a true pleasure to devour.
Ingredients
300g linguine
180g plant based seafood
2 tbsp olive oil
2 tbsp vegan butter
4 garlic cloves, minced
1 red chilli, seeds removed, diced
1 tsp dried oregano
1-2 handfuls baby spinach
2 tbsp fresh parsley, chopped
1-2 tbsp lemon juice
30g vegan parmesan
Method
Add the prawns and cook for 8 minutes.
Add oregano and spinach and cook until wilted.
Add the pasta to the pan with parmesan, black pepper and most of the parsley(save some for finishing the dish) stir until mixed.
Add the lemon juice and toss through the pasta before serving. (Note: I added 1 tbsp of lemon juice to begin with and added a second as I wanted more of a lemon zing)
Serve topped with some more fresh cracked black pepper and the remaining parsley.
This meal was absolutely divine and had my fella asking "When is the next date night?". I certainly will be making this a date night regular meal, it is truly stunning and I am amazed by this prawn replacement.
