Vegan Juicy Lucy Burgers

Homemade vegan Juicy Lucy burgers, seasoned to perfection with a sexy gooey cheese centre.

These burgers are something I used to make often before I was vegan. I wanted to use my plant-based vvitchery to recreate this dish so that my partner, Wolfman, would be able to experience them.

Now when it comes to what vegan cheese to put inside it's completely up to you as to your preference. I've even used a plant based babybel before and cut it into quarters which worked well. Personally I like to use applewood smoked vegan cheese as it's a delicious smoky, creamy cheese that melts well.


I sometimes like to double this recipe so that I can make a supply to stash in the freezer. I recommend defrosting them before cooking to get that sumptuous cheesy centre to melt.

Ingredients

  • 400g vegan mince

  • 1/4 red onion, diced

  • 1 tsp salt

  • 1/2 tsp cracked black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp onion powder

  • pinch of chilli flakes

  • 4 cubes of vegan cheese

Method

  1. In a glass bowl add the vegan mince, red onion, salt, pepper, garlic powder, paprika, onion powder and chilli flakes.

  2. With your hands, thoroughly mix the ingredients together so that all the spices are incorporated evenly.

  3. Separate the mixture into 4 even amounts. Split each ball in half, flatten the two, put a cube of vegan cheese between the two halves and seal together forming a thick patty.

  4. Cook these under the grill or in a frying pan for 12-15 minutes to ensure the centre melts.

  5. Serve with all the burger fixings you like.

Optional - If you like your burgers with a kick use 1/2 tsp cayenne pepper in the patty mix and Mexicana vegan cheese for the centre. We call these "Juicy Lucifers".


Tip - You can freeze the patties before cooking, I recommend putting a square of baking paper between each patty so they do not stick.
